Rice bake with apples and curd cheese

A sweet childhood bake from the oven. Good for breakfast, or in the afternoon with a cup of tea.

Ingredients (serves 5)

  • Rice (dry)150 g
  • Milk 2.5%500 ml
  • Curd cheese (tvarog) 9%250 g
  • Egg (2 pcs)110 g
  • Apple400 g
  • Sugar20 g

Also: Cinnamon, vanilla, a pinch of salt

Method

  1. Rinse the rice (150 g). Bring 500 ml milk with a pinch of salt to the boil in a pan over medium heat (about 5 min), keeping an eye on it so it doesn't boil over.
  2. Add the rice and cook over low heat for 20 min, stirring often, until thick. Take it off the heat and let it cool for 10 min.
  3. While the rice cools, heat the oven to 180 °C (about 10 min) and line a dish with baking paper. Wash and core the apples, cut them into thin wedges and sprinkle with cinnamon.
  4. Stir 250 g curd cheese (tvarog), 2 eggs, 20 g sugar and vanilla into the rice.
  5. Spread half the mixture in the dish, then the apple wedges, then the rest of the mixture. Bake at 180 °C for 35 min, until the top is golden and the middle has set and is no longer runny.
  6. Let it stand for 10 min so it's easier to cut. Cool leftovers and keep in the fridge.

Tips

  • Cook the rice in milk the night before – in the morning just mix and bake.
  • Keeps for 3 days in the fridge; tasty cold too.
  • Want it lighter? Low-fat curd cheese instead of 9%.
