Porridge with blueberries and nuts

A classic that keeps you full until lunch. Frozen blueberries work just as well as fresh.

Ingredients (serves 1)

  • Rolled oats50 g
  • Milk 2.5%200 ml
  • Blueberries80 g
  • Walnuts10 g
  • Honey5 g

Also: A pinch of salt, cinnamon

Method

  1. Pour the milk over the oats, add a pinch of salt and simmer over low heat for 4–5 min, stirring now and then.
  2. Add the blueberries and warm through for 1 more min over low heat.
  3. Sprinkle with chopped nuts and drizzle with honey.

Tips

  • Pour milk over the oats the night before and leave them in the fridge – in the morning just warm them up (or eat them cold).
  • A pinch of salt makes porridge taste sweeter – sounds odd, but it works.
  • Frozen berries make porridge cheaper in winter and are no worse than fresh ones.
  • Want it lighter? Swap half the milk for water – the porridge will still be creamy.
  • More protein? Top with 3 spoonfuls of Greek yoghurt.
