Ingredients (serves 4)
- Curd cheese (tvarog) 9%500 g
- Egg (2 pcs)110 g
- Semolina40 g
- Apple200 g
- Sugar30 g
Also: Vanilla, cinnamon, a pinch of salt
Method
- Turn the oven on to 180 °C – it'll heat up while you make the mixture (about 10 min). Line a baking dish (about 20×20 cm) with baking paper.
- Mash the curd cheese (tvarog) (500 g) with a fork in a large bowl. Crack in 2 eggs, add the sugar (30 g), semolina (40 g), vanilla and a pinch of salt, and mix well.
- Leave the mixture to stand for 10 min so the semolina can swell. Meanwhile, wash the apples (200 g), cut out the cores and grate them.
- Stir the grated apples and cinnamon into the mixture. Pour it into the dish and smooth the top.
- Bake in the oven at 180 °C for about 40 min, until the top is browned. The eggs must be fully cooked: a wooden skewer pushed in should come out dry.
- Let the bake cool in the dish for 10 min, then cut it. Cool any leftovers within 2 hours and keep them in the fridge in a closed container.
Tips
- Bake until the top is browned and let it cool in the dish for 10 min – it'll be easier to cut.
- Cold curd cheese bake makes a great snack at work.
- Keeps for up to 3 days in the fridge in a closed container.
- Want it lighter? Low-fat curd cheese – and the bake will still be fluffy.
