Banana oat cookies

Three-ingredient cookies with no sugar and no eggs. Yes, they really do hold together.

Ingredients (serves 8)

  • Banana (2 pcs)240 g
  • Rolled oats120 g
  • Ground linseed20 g
  • Dark chocolate 70%20 g

Also: Cinnamon, a pinch of salt

Method

  1. Preheat the oven to 180 °C (about 10 min). Line a baking tray with baking paper and finely chop the chocolate.
  2. In a bowl, mash 2 bananas with a fork. Stir in 120 g oats, 20 g ground flaxseed, the cinnamon, a pinch of salt and the chocolate.
  3. Leave the mixture for 5 min so the oats soften. Spoon 8 mounds onto the paper and flatten them to 1 cm thick.
  4. Bake in the oven at 180 °C for 15 min, until the edges are golden brown.
  5. Let the cookies cool on the tray for 10 min – that's how they firm up.

Tips

  • The darker the banana skin, the sweeter the cookies.
  • Keep in an airtight box for 3 days or in the freezer for up to a month.
