  • Wholemeal bread (2 slices)70 g
  • Hummus60 g
  • Tomato100 g
  • Lettuce leaves20 g

Method

  1. Spread the bread with hummus.
  2. Top with lettuce leaves and tomato slices, and sprinkle with pepper.

Tips

  • Keep hummus in the fridge and finish it within 4–5 days of opening.
  • Toast the bread – the sandwich won't go soggy, even by lunchtime.
  • Want it hotter? Sprinkle with smoked paprika or chilli flakes.
