Ingredients (serves 1)

  • Egg (2 eggs)110 g
  • Egg white (2 egg whites)66 g
  • Cottage cheese100 g
  • Spinach40 g
  • Tomato100 g
  • Rapeseed / sunflower oil3 g

Also: Chives, salt, pepper

Method

  1. Get ready: wash the spinach and tomato (100 g), cut the tomato into wedges and chop the chives.
  2. In a bowl, whisk 2 eggs and 2 egg whites with a pinch of salt and pepper until smooth.
  3. Heat 3 g oil (about half a teaspoon) in a frying pan over medium heat. Add the spinach and fry for 1 min, until wilted.
  4. Pour in the eggs, cover and cook over low heat for 3 min, until the omelette has almost set.
  5. Spoon 100 g cottage cheese onto one half of the omelette, fold it over and leave covered over low heat for another 1 min, until the eggs are fully set.
  6. Slide onto a plate, sprinkle with chives and serve with the tomato.

Tips

  • Add the cottage cheese to an almost-cooked omelette – it warms up but doesn't melt.
  • Want it hotter? A pinch of chilli flakes.
