Ingredients (serves 1)

  • Tofu (firm)120 g
  • Potatoes, boiled150 g
  • Bell pepper80 g
  • Onion40 g
  • Rapeseed / sunflower oil8 g

Also: Smoked paprika, turmeric, salt, pepper, chives

Method

  1. Get ready: dice the cooked potatoes (150 g), finely chop the onion and cut the pepper into strips.
  2. Pat the tofu (120 g) dry with kitchen paper and crumble it with your hands. Sprinkle with turmeric, smoked paprika and pepper.
  3. Heat the oil (8 g) in a frying pan over medium heat. Fry the potatoes and onion for 5 min, until the potatoes are crispy.
  4. Add the pepper and tofu and season lightly with salt. Fry over medium heat for another 5 min, stirring now and then, until the tofu is hot and the pepper is soft.
  5. Sprinkle with chopped chives and serve straight away.

Tips

  • Use yesterday's boiled potatoes – they crisp up faster.
  • Smoked paprika gives the tofu a “farmhouse” flavour.
  • Want it hotter? A pinch of hot paprika.
