Ingredients (serves 1)

  • Rice cakes (2 pcs)18 g
  • Tofu (firm)80 g
  • Cucumber80 g

Also: Dill, lemon juice, salt, pepper

Method

  1. Cut the tofu into thin slices, put it on the crackers with the cucumber, drizzle with lemon and sprinkle with dill.

Tips

  • Smoked tofu is especially tasty here – check it's gluten-free if that matters to you.
  • Want it hotter? A pinch of chilli on the tofu.
