Millet bake with apples and coconut milk

Ingredients (serves 3)

  • Millet (dry)150 g
  • Apple400 g
  • Coconut milk (tinned)100 g
  • Hemp seeds (hulled)30 g

Also: Water (~450 ml), cinnamon, vanilla, a pinch of salt

Method

  1. Heat the oven to 180 °C (about 10 min). Rinse the millet (150 g) several times in hot water, until the water runs clear.
  2. Coarsely grate half the apples and cut the rest into thin wedges.
  3. In the dish, mix the millet, grated apple, 100 g coconut milk, 450 ml water, cinnamon, vanilla and a pinch of salt. Level it out and arrange the apple wedges on top.
  4. Bake at 180 °C for 35 min, until the millet has absorbed the liquid and is soft. If the top browns too quickly – cover with foil.
  5. Let it stand for 5–10 min, sprinkle with 30 g hemp seeds and serve. Keep leftovers in the fridge in a closed container.

  • Tasty cold too – take a piece to work.
