Soya yoghurt with berries and seeds

Ingredients (serves 1)

  • Soya yoghurt (plain, unsweetened)200 g
  • Frozen mixed berries100 g
  • Banana60 g
  • Ground linseed10 g
  • Pumpkin seeds10 g

Method

  1. The evening before, move the frozen berries (100 g) to the fridge so they're thawed by morning.
  2. Slice the banana (60 g).
  3. Spoon the soya yoghurt (200 g) into a bowl and top with the berries, banana slices, ground flaxseed (10 g) and pumpkin seeds (10 g).

Tips

  • Choose plain unsweetened soya yoghurt – sweetened ones have a lot of sugar.
  • Thaw frozen berries overnight in the fridge – they'll be juicy by morning.
  • Want it lighter? No banana – the berries are sweet enough.
