Apple cake (lighter)
Grandma's-garden cake: lots of apples, not much sugar. It's still cake – just a better one.

Ingredients (serves 8)
- Wheat flour150 g
- Egg (2 pcs)110 g
- Natural yoghurt150 g
- Apple600 g
- Sugar50 g
- Rapeseed / sunflower oil30 g
Also: Cinnamon, 1 tsp baking powder, a pinch of salt
Method
- Turn the oven on to 180 °C (it takes 10 min to heat up). Line a tin with baking paper. Wash the apples (600 g), core them and cut into wedges.
- In a bowl, whisk 2 eggs with 50 g sugar until pale. Stir in 150 g yoghurt and 30 g oil.
- Add 150 g flour, 1 tsp baking powder and a pinch of salt. Mix only until no dry flour is left.
- Pour half the batter into the tin, add the apples, sprinkle with cinnamon and cover with the rest of the batter.
- Bake in the oven at 180 °C for 40 min, until the top is golden and a wooden skewer comes out dry.
- Let it cool in the tin for 10–15 min, then cut into 8 pieces.
Tips
- Tarter apples (e.g. Antonovka) stay juicy when baked.
- Cinnamon tastes ‘sweet’ – so you can use even less sugar.
- Keeps for 3 days covered.
