Ingredients (serves 3)
- Frozen mixed berries300 g
- Potato starch30 g
- Sugar20 g
Also: Water (~600 ml), cinnamon stick (optional)
Method
- In a pan, mix 300 g frozen berries, 500 ml water and 20 g sugar. Add a cinnamon stick if you have one.
- Bring to the boil over medium heat (about 5–7 min). Meanwhile, in a glass, stir 30 g starch into 100 ml cold water until there are no lumps.
- Pour the starch into the boiling berries in a thin stream, stirring all the time. Cook over low heat for about 1 min, until it thickens and comes back to the boil.
- Take it off the heat and remove the cinnamon stick. Eat warm or chilled; keep leftovers in the fridge for up to 3 days.
Tips
- Always mix the starch into cold water first – tip it into something hot and you'll get lumps.
- For a thicker kissel – double the starch; for a drink – halve it.
