Chia pudding with coconut milk and pear

Ingredients (serves 1)

  • Chia seeds25 g
  • Coconut milk (tinned)50 g
  • Soya drink (unsweetened)150 ml
  • Pear150 g

Also: Cinnamon, vanilla

Method

  1. Mix the chia with the coconut milk, soya drink and spices.
  2. Leave in the fridge for at least 4 hours or overnight.
  3. Top with diced pear.

Tips

  • Stir after 10 min and once more before it goes in the fridge – it won't set in lumps.
  • Keeps for 3 days in the fridge.
