Rice porridge with coconut milk and berries

Ingredients (serves 1)

  • Rice (dry)50 g
  • Coconut milk (tinned)60 g
  • Frozen mixed berries100 g
  • Hemp seeds (hulled)10 g

Also: Water, cinnamon, a pinch of salt

Method

  1. Rinse the rice (50 g) in cold water.
  2. Put the rice in a pot with 250 ml water and a pinch of salt, and bring to the boil over high heat for 2–3 min.
  3. Then cook over low heat for 20 min, stirring now and then so it doesn't stick. The rice should turn soft and the porridge fairly thick.
  4. Stir in the coconut milk (60 g) and frozen berries (100 g). Warm over low heat for 2–3 min, until the berries have thawed and the porridge is hot again.
  5. Pour into a bowl and sprinkle with hemp seeds (10 g) and cinnamon.

Tips

  • Make a triple batch – it keeps in the fridge for 2 days; reheat with a splash of water.
  • Cool cooked rice within an hour.
