Quinoa porridge with berries

A different kind of porridge: gentle, nutty and gluten-free. The berries can be frozen.

Ingredients (serves 1)

  • Quinoa (dry)50 g
  • Soya drink (unsweetened)200 ml
  • Frozen mixed berries100 g
  • Chia seeds8 g

Also: Cinnamon, vanilla

Method

  1. Put the quinoa (50 g) in a fine sieve and rinse it well with cold water.
  2. Put the quinoa in a small pan and pour over the soya drink (200 ml). Bring to the boil over medium heat, then simmer over low heat for 15 min until the liquid is absorbed. Stir now and then so it doesn't catch.
  3. Take off the heat and stir in the frozen berries (100 g) and chia seeds (8 g). Leave to stand for 2 min – the berries will thaw in the hot porridge.
  4. Season with cinnamon and vanilla.

Tips

  • Always rinse quinoa – the grains have a slightly bitter coating.
  • Keep cooked quinoa in the fridge for up to 3 days – in the morning just reheat it with some drink.
  • Cheaper? Swap half the quinoa for millet – similar taste, half the price.
