Oven-baked turkey patties with buckwheat

Ingredients (serves 4)

  • Turkey mince500 g
  • Egg55 g
  • Onion80 g
  • Rolled oats30 g
  • Buckwheat (dry)200 g
  • Cucumber300 g
  • Tomato200 g

Also: Garlic, salt, pepper, dill

Method

  1. Get ready: turn the oven on to 200 °C to heat up (about 10 min) and line a baking tray with baking paper. Finely grate the onion (80 g) and chop the garlic.
  2. In a bowl, mix the mince (500 g), 1 egg, the onion, garlic, oats (30 g), salt and pepper. Leave for 5 min so the oats can swell.
  3. With wet hands, shape 12 patties and put them on the tray. Then wash your hands well with soap.
  4. Bake in the oven at 200 °C for 20 min until the patties are browned.
  5. While the patties bake, rinse the buckwheat (200 g), pour over 400 ml water and season lightly with salt. Bring to the boil over high heat, then cover and simmer over low heat for 15 min.
  6. Check the patties: when you cut one open, it must not be pink inside and the juices must run clear (or a thermometer shows 75 °C). If it's still pink, bake for another 3–5 min at 200 °C.
  7. Chop the cucumber (300 g) and tomato (200 g), season lightly with salt and sprinkle with dill. Serve with the patties and buckwheat.
  8. Cool any leftover patties and buckwheat within 2 hours and keep them in the fridge for up to 3 days.

Tips

  • Wet your hands before shaping the patties – the mince won't stick.
  • The patties are done when there's no pink left in the middle.
  • Freeze half of them raw – next time just bake them.
  • Want it hotter? A pinch of chilli and more garlic in the mince.
