Salmon with potatoes and broccoli

Ingredients (serves 2)
- Salmon (raw)250 g
- Potatoes (raw)500 g
- Broccoli300 g
- Olive oil10 g
- Lemon40 g

Method
- Get ready: turn the oven on to 200 °C to heat up (about 10 min) and line a baking tray with baking paper. Wash the potatoes (500 g) well and cut them into wedges.
- Put the potatoes on the tray, drizzle with half the oil (1 tsp, 5 g), season lightly with salt and toss. Bake in the oven at 200 °C for 15 min.
- While the potatoes bake, break the broccoli (300 g) into small florets and wash it. Pat the salmon (250 g) dry and sprinkle with salt and pepper.
- Take out the tray and push the potatoes to one side. Add the salmon and broccoli, and drizzle with the rest of the oil (5 g).
- Bake for another 12–15 min at 200 °C, until the potatoes are soft and the edges of the broccoli are lightly browned.
- Check the salmon: inside it must no longer be translucent and should flake easily with a fork. If it's still translucent, bake for another 2–3 min at 200 °C.
- Squeeze the juice of the lemon (40 g) over the fish and vegetables, sprinkle with dill and serve.
Tips
- Salmon is done when it flakes easily with a fork – don't overcook it, or it'll be dry.
- Baking paper on the tray = almost no washing-up.
- Eat cooked fish within 2 days.
- Want it hotter? Rub the salmon with garlic and chilli flakes before baking.
- Cheaper? Cod instead of salmon: cheaper, lighter, same amount of protein.
