Tinginiai virtiniai (lazy curd-cheese dumplings) with berries

Halfway between curd-cheese pancakes and dumplings – with no fiddly shaping. Soft, gentle and just like childhood.

Ingredients (serves 3)

  • Curd cheese (tvarog) 9%400 g
  • Egg (1 egg)55 g
  • Wheat flour100 g
  • Natural yoghurt150 g
  • Frozen mixed berries200 g

Also: A pinch of salt, vanilla

Method

  1. Get ready: put a large pot of water on high heat (it will boil in about 10 min). Take the berries (200 g) out of the freezer to thaw.
  2. In a bowl, mash 400 g curd cheese (tvarog) well with a fork together with the egg, a pinch of salt and the vanilla.
  3. Stir in 100 g flour, keeping back 1 tbsp to dust the worktop. The dough will be soft – that's exactly how it should be.
  4. On a floured worktop, roll the dough into a 2–3 cm thick log and cut it diagonally into 2 cm pieces.
  5. Salt the boiling water, add the dumplings in batches and stir. Cook over medium heat until they float, then for another 2 min.
  6. Lift out with a slotted spoon and serve with 150 g yoghurt and the berries.

Tips

  • Push the curd cheese through a sieve or mash it with a fork – the dumplings will be more tender.
  • Don't overdo the flour – the dough should be soft and slightly sticky.
  • Want it lighter? Low-fat curd cheese instead of 9 % curd cheese.
