French toast with berries

Yesterday's loaf + an egg = Sunday breakfast. Without a mountain of icing sugar.

Ingredients (serves 1)

  • White bread (baton loaf) (2 slices)60 g
  • Egg (1 egg)55 g
  • Milk 2.5%50 ml
  • Rapeseed / sunflower oil3 g
  • Frozen mixed berries80 g
  • Natural yoghurt50 g

Also: Cinnamon, a pinch of salt

Method

  1. Whisk the egg with the milk, cinnamon and salt.
  2. Soak the bread slices in the mixture and fry in the oil over medium heat for 2 min on each side, until the egg has set.
  3. Serve with yoghurt and berries.

Tips

  • Day-old bread works best – it soaks up the egg without falling apart.
  • Fry over medium heat – the inside has time to cook.
  • Want it lighter? Swap half the milk for water.
