Ingredients (serves 3)

  • Cod (raw)450 g
  • Potatoes (raw)700 g
  • Milk 2.5%100 ml
  • Butter10 g
  • Garden peas (frozen)240 g
  • Lemon40 g

Method

  1. Get ready: turn the oven on to 200 °C to heat up (about 10 min) and line a baking tray with baking paper. Peel the potatoes (700 g) and cut them into similar-sized pieces.
  2. Put the potatoes in a pan, cover with cold water and season lightly with salt. Bring to the boil over high heat, then cook over medium heat for 15–20 min, until a knife slides in easily.
  3. While the potatoes cook, pat the cod (450 g) dry with kitchen paper, season with salt, sprinkle with pepper and lay it on the tray.
  4. Bake the cod in the oven at 200 °C for 12–15 min, until it's no longer translucent and flakes easily with a fork.
  5. While the fish bakes, warm the milk (100 ml) in a small pan over low heat for 1–2 min, so it's warm but doesn't boil.
  6. Drain the potatoes, add the butter (10 g) and warm milk, and mash until smooth.
  7. Tip the peas (240 g) into boiling water and cook for 3 min over medium heat, then drain.
  8. Serve the fish with the mash and peas, drizzle with the juice of the lemon (40 g) and sprinkle with dill.

Tips

  • Thaw frozen cod in the fridge overnight and pat it dry well.
  • Mash the potatoes with warm milk – cold milk makes the mash gluey.
  • Eat cooked fish within 2 days.
  • Want it hotter? A teaspoon of horseradish in the mash, black pepper on the fish.
  • Want it lighter? Mash without butter – warm milk is enough.
