Žuvienė – fish soup with cod and salmon

Ingredients (serves 4)

  • Cod (raw)400 g
  • Salmon (raw)200 g
  • Potatoes (raw)450 g
  • Carrot150 g
  • Onion100 g

Also: Bay leaves, allspice, dill, lemon, salt, water (~1.5 l)

Method

  1. Get ready: peel the potatoes and cut them into cubes, slice the carrot into rounds and finely chop the onion. Rinse the fish, check there are no bones left and cut it into 3 cm pieces.
  2. Pour 1.5 l of water into a pot and add the potatoes, carrot, onion, 2 bay leaves and a few allspice berries. Bring to the boil over high heat (about 8–10 min).
  3. Turn down to medium heat and cook for 15 min until the potatoes are soft.
  4. Turn down to low heat so it barely bubbles. Carefully add the pieces of fish and cook for 8 min. Don't stir, so the fish doesn't break up.
  5. Check the fish: it should be opaque and flake easily with a fork. Remove the bay leaves.
  6. Season lightly with salt, sprinkle with dill and serve with a lemon wedge.

Tips

  • Add the fish right at the end – once the potatoes are soft. Overcooked, it falls apart.
  • Frozen fish works too – thaw it in the fridge overnight.
  • Don't be stingy with the dill – it's the soul of the soup.
  • Cheaper? Instead of salmon – the same amount of extra cod.
