Cod in tomato sauce with potatoes

- Cod (raw)450 g
- Tinned tomatoes400 g
- Courgette200 g
- Onion100 g
- Potatoes (raw)450 g
- Olive oil15 g

Method
- Get ready: peel the potatoes and cut them in half. Finely chop the onion and 2 garlic cloves and cut the courgette into cubes. Cut the cod into 4–5 cm pieces.
- Put the potatoes in a pot, cover with water, season lightly with salt and bring to the boil over high heat. Cook over medium heat for 20 min until a knife goes through easily.
- While the potatoes cook, heat 1.5 tbsp olive oil (15 g) in a deep frying pan over medium heat. Fry the onion, garlic and courgette for 5 min until soft.
- Add the tomatoes, oregano and basil, season lightly with salt and add pepper. Simmer over medium heat for 10 min until the sauce thickens a little.
- Put the pieces of cod into the bubbling sauce, cover and simmer over low heat for 8–10 min.
- Check the fish: it should be opaque and flake easily with a fork. If it's still translucent, simmer over low heat for another 2–3 min.
- Drain the potatoes and serve with the cod and sauce.
Tips
- Put the fish into sauce that's already bubbling and cover it – it will be cooked in 8–10 min.
- Frozen cod fillet pieces work too – put them straight into the sauce, just cook for 5 min longer.
- Want it hotter? Chilli flakes in the sauce.
- Want it lighter? Half the potatoes, more courgette.
