Oven-baked salmon with sweet potatoes and green beans

Ingredients (serves 2)

  • Salmon (raw)250 g
  • Sweet potatoes400 g
  • Green beans (frozen)250 g
  • Olive oil10 g
  • Lemon40 g

Also: Garlic, smoked paprika, dill, salt, pepper

Method

  1. Turn the oven on to 200 °C to heat up (about 10 min). Wash the sweet potatoes (400 g) and cut them into 2 cm wedges. Crush 1 garlic clove and chop the dill.
  2. Toss the potatoes with half the oil (5 g), smoked paprika and a little salt, and spread them on a tray. Roast at 200 °C for 10 min.
  3. Meanwhile, pat the salmon (250 g) dry and season with the garlic, pepper and a pinch of salt. Halve the lemon: squeeze one half and cut the other into wedges.
  4. Push the potatoes to one side and add the salmon and frozen green beans (250 g). Drizzle with the remaining oil (5 g) and the lemon juice.
  5. Roast at 200 °C for another 15–18 min, until the potatoes are soft and the beans are hot.
  6. Check the salmon: it should be opaque all the way through and flake easily with a fork. If it's still translucent in the middle, roast at 200 °C for another 3 min.
  7. Sprinkle with dill and serve with the lemon wedges.

Tips

  • Put the sweet potatoes in the oven 10 min earlier – they take longer than the fish.
  • Salmon is done when it flakes easily into layers with a fork.
  • Want it hotter? Chilli flakes over the salmon and potatoes.
  • Cheaper? Mackerel instead of salmon.
