Ingredients (serves 2)
- Wheat tortilla (2 pcs)120 g
- Tomato purée40 g
- Hard cheese60 g
- Bell pepper100 g
- Mushrooms (button)100 g
- Spinach30 g
Also: Oregano, basil, garlic
Method
- Turn the oven on to 220 °C (it takes 8–10 min to heat up). Cut the pepper (100 g) into strips and the mushrooms (100 g) into thin slices, and wash the spinach.
- Grate the cheese (60 g). Mix the tomato purée (40 g) with oregano, chopped garlic and a spoonful of water so it spreads more easily.
- Put the tortillas on a baking tray and bake them plain in the oven at 220 °C for 2 min.
- Spread the tortillas with the tomato purée, add the spinach, pepper and mushrooms and scatter over the cheese.
- Bake in the oven at 220 °C for 6–8 min, until the cheese has melted and the edges are browned.
- Sprinkle with basil, cut into triangles and serve straight away.
Tips
- Bake the tortilla plain in the oven for 2 min first – the base will be crisp.
- For kids – let them add the toppings themselves. They'll even eat the mushrooms.
- Want it hotter? Chilli flakes on top.
