Fish cakes with potatoes and pickled cucumbers

Ingredients (serves 4)

  • Cod (raw)500 g
  • Onion80 g
  • Egg (1 pc)55 g
  • Rolled oats30 g
  • Rapeseed / sunflower oil15 g
  • Potatoes (raw)600 g
  • Pickled cucumbers (fermented)150 g

Also: Dill, salt, pepper, lemon zest

Method

  1. Get ready: peel the potatoes, cover with water and season lightly with salt. Pat the cod dry, check there are no bones left and cut it into pieces. Peel the onion.
  2. Cook the potatoes over medium heat for 20–25 min, until a knife slides in easily.
  3. Meanwhile, chop the cod and onion finely with a knife or briefly in a food processor. Stir in 1 egg, 30 g oats, the dill, lemon zest, pepper and a little salt.
  4. Leave the mixture for 10 min so the oats swell. With wet hands, shape into 8 cakes.
  5. In a frying pan, heat half the oil (about 1.5 tsp) over medium heat. Fry 4 cakes for 4 min on each side until golden.
  6. Fry the other 4 cakes the same way in the rest of the oil, over medium heat for 4 min on each side. The fish inside must turn opaque and flake easily.
  7. Drain the potatoes. Serve with the fish cakes and pickled cucumbers.

Tips

  • Chop the fish with a knife or briefly in a food processor – too fine a mixture makes the cakes rubbery.
  • Wet your hands with water – the mixture won't stick while you shape it.
  • Cooked fish cakes can be frozen – reheat them in the oven.
  • Want it lighter? Half the potatoes, more fresh cabbage salad.
