Tuna patties with rice and vegetables
Two tins of tuna turn into juicy patties. Cheap, quick and packed with protein.

Ingredients (serves 3)
- Tuna in spring water240 g
- Egg (1 egg)55 g
- Rolled oats40 g
- Onion50 g
- Rapeseed / sunflower oil10 g
- Rice (dry)150 g
- Cucumber200 g
- Tomato150 g
Also: Dill, lemon zest, salt, pepper
Method
- Get ready: rinse the rice (150 g). Drain the tuna (240 g) well and press out the liquid. Finely chop the onion (50 g) and dill.
- Cover the rice with 300 ml water, season lightly with salt and bring to the boil over high heat for 2–3 min. Then cover and cook over low heat for 18 min.
- Meanwhile, in a bowl, mash the tuna with the egg, oats (40 g), onion, dill, a little lemon zest and pepper. Go easy on the salt – the tuna is already on the salty side.
- Shape 6 patties and put them in the fridge while the pan heats up – that makes them easier to flip.
- Heat the oil (10 g) in a frying pan over medium heat. Fry the patties for 3 min on each side, until golden and the egg inside has set.
- While the patties fry, chop the cucumber (200 g) and tomato (150 g) and mix with the rest of the dill.
- Serve the patties with the rice and vegetables.
Tips
- Drain the tuna well – a mixture that's too wet won't hold together.
- Chill the shaped patties in the fridge for 10 min – they won't fall apart in the pan.
- Want it lighter? A third less rice, more cucumber.
