Wholewheat pasta with prawns and courgette

Ingredients (serves 2)
- Wholewheat pasta (dry)160 g
- Prawns (peeled)250 g
- Courgette300 g
- Tomato200 g
- Olive oil15 g
- Lemon20 g
Also: Garlic, chilli flakes, parsley, salt
Method
- Get ready: put a pot of water on high heat to boil (about 8 min). Cut the courgette (300 g) into half-moons, dice the tomatoes (200 g) and thinly slice 2 garlic cloves. Pat the prawns dry.
- Salt the boiling water lightly and cook the pasta (160 g) over medium heat for 10–12 min (check the packet). Drain, keeping back a cup of the water.
- Meanwhile, heat the oil (15 g) in a frying pan over medium heat. Fry the garlic and a pinch of chilli flakes for 1 min, until fragrant but not browned.
- Add the courgette and tomatoes and fry over medium heat for 4 min, until the courgette is soft.
- Add the prawns (250 g) and fry over medium heat for 2–3 min, until pink and completely opaque.
- Add the pasta, squeeze in the lemon (20 g) juice, add chopped parsley and toss. If it's a bit dry, add a splash of pasta water. Season lightly with salt and serve.
Tips
- Prawns cook in 2–3 min – take them off the heat as soon as they turn pink. Overcooked, they go rubbery.
- Thaw frozen prawns in cold water for 10 min.
- Want it hotter? More chilli flakes in with the garlic.
- Want it milder? Leave out the chilli – lemon zest brings plenty of zing.
- Want it lighter? A quarter less pasta, more courgette.
